Also known as Saffron Rice, Persian Saffron Rice, or Pulao, this tasty and easy Persian Yellow Rice is a staple in Persian and Middle Eastern cooking. Made in just 30 minutes and only 5 ingredients, this vibrant yellow (with no food coloring!) Persian rice is savory yet slightly sweet and will bring an international flair to any weeknight dinner. Not only in Middle East, but this one is popular in other countries too. For Instance, the Trinidad Saffron Rice is Caribbean style preparation where rice is cooked with coconut oil, veggies, and raisins. The saffron they refer to is not the spice saffron, but the color saffron which comes from the use of turmeric.

What is tahdig? Tahdig, pronounced tah-deeg, literally means "bottom of the pot" in Persian. And it refers to a beautiful, pan-fried Persian rice that is fluffy and buttery on the inside with a perfectly golden crust, which is the layer at the bottom of the pot.

Melt the butter in a 3-quart saucepan over medium heat. Add half the onions and cook, stirring occasionally, until soft and golden, about 5 minutes. Add the rice and 1 teaspoon salt and stir to.


Add chicken or vegetable stock and salt to the pot. Bring to a boil, stir. Bring back to a boil for 30 seconds. Cover the pot and reduce heat to low. Let the rice cook for 20 minutes. Turn off the heat, but keep pot covered, and continue to let the rice sit and steam in the covered pot for 10 minutes longer.


It goes perfect with my other Middle Eastern inspired dishes: Persian Saffron Chicken Kebabs (Joojeh Kabab) or Easy 20-Minute One Pot Lentils , with a refreshing Persian Shirazi salad with cucumber and tomato on the side. In Persian cuisine, plain basmati rice is made in 2 different ways: polow (regular rice) and kateh (simple rice).


Cook onion until translucent and stir in garlic, then cook until fragrant. Next, toast the rice until it smells toasted to give it a wonderful nutty flavor for about 2 minutes. 3. Cook the Rice. Add cumin, salt, turmeric, and saffron. Stir for a few seconds. Add the broth and give the rice a quick stir.


Soak the rice in tepid water for 10 minutes; drain. While the rice is soaking, put half a kettle of water on to boil. Add the oil to a medium, thick-bottomed lidded saucepan over medium heat. Add the pine nuts and cook until golden brown, about 1 to 2 minutes, stirring constantly. Transfer the pine nuts to a small bowl and set aside.


Heat 3 tablespoons butter in a large saucepan over medium-high heat. Add 1 finely chopped onion and cook, stirring, until softened, 4 minutes. Stir in 2 cups basmati rice, 2 teaspoons kosher salt.


Saffron Rice With Peas: Omit the dried fruit and nuts and stir in 1 cup thawed frozen peas after the rice is finished cooking. Serving Suggestions. I find saffron rice pilaf to be a very versatile side as it can be paired with Indian, Mediterranean and Middle Eastern food.

Place the pot on the stove over high heat. While the stock is coming to a boil, add the turmeric, saffron, chile (if using), and a squeeze of lemon or lime juice. Stir well. Add the rice plus 1 1/2 tablespoons fish sauce (or 1/4 teaspoon salt) and stir.


First, measure out all of your ingredients and have them ready to go. 2. Rinse 1.5 cups basmati rice 3 to 4 times in water, or until the water runs clear of the starch. 3. Place the rice in a large container and add enough water to cover. Soak the rice for 20 to 30 minutes. 4.
