Step 1: Make the Marinade In a medium bowl, combine the yogurt, olive oil, paprika, cumin, cinnamon, red pepper flakes, lemon zest, lemon juice, salt, pepper and garlic. Stir to combine. Step 2: Prep the Chicken and Thread onto Skewers Trim the chicken of any excess fat and gristle. Lemon Juice - Fresh squeezed is the best, and lemon is a must for Mediterranean chicken kabobs! Combine olive oil, lemon juice, minced garlic, oregano, paprika, salt and pepper in a bowl, or directly in a large plastic food storage bag (where you will marinate the chicken). Pierce the chicken with a fork several times, add to bag and coat with marinade. Place the bag in the fridge and marinate for at least 30 minutes for most flavorful meat.

Steps. The marinade includes: Sweet paprika; Smoked spicy paprika (Spanish pimentos); Italian seasoning (I like using it as it contains oregano, basil, sage and garlic); Nutmeg; Cardamon; Garlic; Lemon; Olive oil; and Salt and pepper. You will need to mix all the marinade ingredients, cut your chicken into cubes, and cut up peppers and onions too.

Tender cuts of beef can be marinated for 15 minutes to 2 hours while less tender cuts, such as flank steak, should be marinated for 6-24 hours. Allow ¼ to ½ cup of marinade for every pound of beef, and always marinate beef in the refrigerator, never at room temperature. Keep food safety in mind when thawing beef before grilling.

Heat 1 tablespoon canola oil in a small saucepan over medium heat. Add garlic and onion, and cook, stirring occasionally, until translucent, about 3-4 minutes.
