Punjabi Egg Curry (Anda Curry) is a spicy, robust Indian curry where hard-boiled eggs are simmered in a spicy onion tomato gravy. This gluten-free and dairy-free curry comes together in under 30 minutes using basic ingredients. Each home has a different style of making anda curry and with a few variations, you get a, totally new taste. In a deep pan, boil eggs on medium heat for 10 minutes. Cool, peel, cut in half and reserve. In a skillet or wok heat oil on medium heat. Add green chilies, whole jeera, cinnamon stick, and cloves. Once chili's start to sputter add onion, cook until translucent. Add tomato, ginger, garlic, and mix for 4-5 minutes.
Heat oil and ghee in a large, heavy bottomed pan, pot or wok. Add bay leaves and fry for few seconds. Now, add ground onion tomato paste and sauté on high heat for 4-5 minutes. Add ginger garlic paste, turmeric, coriander powder, chili powder and mix. Cook for few minutes until masala starts separate from the fat.
Add the ginger and garlic pastes, all the dry spices (coriander powder, cumin powder, garam masala powder, turmeric powder, and red chili powder) then mix and fry till the oil begins to separate from the masala (onion-tomato-spice mix). Add 2 cups of warm water to this masala and bring it to a boil over medium heat.
Boil water in a saucepan with a pinch of salt. Once the water starts boiling, add the cleaned spinach leaves to the hot water ( image 1 ). Cook for about 40 - 50 seconds until the colour of the leaves turns bright green. Turn off the heat ( image 2 ). Transfer the leaves immediately to the bowl of ice-cold water ( image 4 ).
Egg roast Tips to make perfect dhaba style egg curry: You will need hard boiled eggs for making this gravy. Add 6 eggs to a saucepan and fill it with water. Let the water comes to a boil. Boil the eggs for 5 minutes on high flame. Switch off the flame. Drain off the hot water and place it in cold water.
Pour over 200ml cold water and raise the heat to high. Once any excess water has evaporated, lower the heat. To avoid lumps in the sauce, stir the yogurt before adding it to the pan. Stir to mix.
Add water and cover: Add the water to the pan, then stir the mixture briefly. When it comes to a simmer, cover with a lid and let it cook for 1-2 minutes until the sauce is thicker and bubbling. Taste the gravy and adjust the seasoning, if needed.
